Gluten-Conscious

Gluten is a protein in wheat, rye and some other grains that some people find troublesome. There is a recent increase in demand for baked goods without gluten, and we do our best to fill that need.

Our gluten-conscious baking uses a variety of flours, our favorites being whole rice and yellow pea flour. This makes a product high in fiber, protein, vitamins and minerals. We use organic ingredients, minimally processed.

All our gluten-conscious foods are made from gluten-free ingredients and prepared in a separated area of the Bakery, away from gluten flour. Then they are baked in their own oven. However, we don’t call them “gluten-free” because that label is reserved only for products made in dedicated gluten-free facilities. People with severe allergies or celiac disease are advised to be cautious because, despite our best efforts, some traces of gluten may be present.

Light Rice Bread

This gluten-conscious bread is made from gluten-free brown rice, golden flax, yellow peas and organic corn or tapioca starch. It is fairly light, with a delicious rich taste, high in vitamins, protein and minerals. Like all our gluten-conscious foods, it is made in a separate part of our facility and baked in a separate oven from our regular breads.

Buckwheat Sourdough Bread

This is a gluten-conscious, 100% sourdough bread (yeast-free). Made from buckwheat, flax, corn, and brown rice flours with a scattering of sunflower and pumpkin seeds. Moist, tasty and wholesome. Also prepared and baked in a separate gluten-conscious area.

We donate at least 1% from sales to support environmental causes.
